Soft, fluffy and lightly spiced, there's nothing quite a nice wedge of carrot cake smothered in thick and gooey cream cheese. The scrumptious bake is a family favourite in many households and you'll often see it in the display window in many coffee shops and garden centre cafes.

Studded with crunchy walnuts and packed with grated carrot, it's the perfect accompaniment to a cup of tea. If you adore the sweet treat, but can't be bothered to make a large family-size cake, then a mugcake is for you.

As the name suggests, the mug-shaped cake is prepared and cooked in a mug and as it's a single-size portion - perfect if you live alone or just fancy a bit of cake in the middle of the day. What's more, it takes a mere two minutes to cook in the microwave.

Made with some basic kitchen cupboard ingredients, it requires no eggs making it suitable for those following a plant-based diet. It also requires very little skill, making it ideal for children to give it a go too. Foodie Cakeontherun has shared her simple recipe and it's a must-try.

Gluten-free option - use gluten-free flour, baking powder and a big pinch xanthan gum (available in major supermarkets in the Free From dry aisle).

Vegan option - use dairy-free milk and margarine.
